Idli is one of the most popular and healthy South Indian Breakfast recipe. All the South Indians prepare this batter and have it stored in the refrigerator. Now the batter is available readymade also but homemade batters are good and also hygienic for everyone. Here is my special recipe for making soft spongy idlis and this tastes yummy with Vadacurry.

Soft Spongy Idli |
Ingredients for making Kushboo Idli
Raw Rice-4 cups
Urad Dal-1 cup
Javvarisi-1 cup
Salt-1 tbsp
Cooking Soda-1/2 tsp
Method for preparing Kushboo Idly / Mallige Poo Soft Idli
1.First wash the rice and urad dal with water and soak both of them together for 3 to 4 hours.
2.Wash the javvarisi or Sago and soak with 3-4 cups of water for 3 hours.
3.Grind everything together in a grinder to a smooth batter.
4.Allow this to ferment for 6 to 8 hours.
5. Now add little baking soda with water and mix well in the fermented batter.
6.Next grease the idli maker, pour a ladle full of batter and steam it for 8-10 minutes
7.Now the hot malligai poo idli is ready.
