Ingredients for making Aloo Bhindi Dry Curry
Potato - 1 no.Lady's finger - 10 nos.cut into 1/2" discs
Onion - 2 nos.
Tomatoes - 2.
Oil as required.
Mustard seeds - 1 tsp.
A generous pinch of asafoetida
cumin seeds - 1 tsp.
coriander powder - 1 tsp.
Red chilli powder - 1 tsp.
Garam masala powder - 1/2 tsp.
A pinch of turmeric powder
A few curry leaves
Salt to taste
Method for making Aloo Bhindi Dry Curry
1. Wash the potatoes, peel the skin and then cut them into small cubes.2. Wash and cut the Bhindis into lenghtwise. Keep them in refrigerator for 10 to 15 minutes.
3. Heat oil in a pan, splutter the mustard seeds. Add the curry leaves followed by the the cumin seeds and then all the powders one by one. Add the finely chopped onions and tomatoes and saute well.
4. Now add the potatoes and lady's finger, mix well and cook in a low flame till the veggies become soft and tender.
