Aviyal (avial) is one of the healthy and delicious side dish recipe which goes well with adai, pongal, variety rice, karakuzhambu, etc. Avial is a easy to make south Indian recipe which is nothing but a combination of mixed vegetables, curd, coconut. Tastes better when you season using coconut oil.
Drumstick -1
Beans - 8
Potato -2
Raw plantain -1
Long beans - 8
Raw Mango - few pieces (optional)
White pumpkin - 1 slice
Curd -2 tbsp
For the grinding
Grated coconut - 1 cup
Cumin seeds - 1/2 tsp
Green chilli -3
For the seasoning
Coconut oil - 2-3 tsp
Curry leaves - few
1. Wash all the veggies and peel the skin for carrots, raw plantain, potato and cut all the vegetables into 2 inch long piece.
2. In a mixer grind grated coconut, green chillies and cumin seeds. Keep it aside.
3. Place all the veggies in a cooker add salt and turmeric powder and cook for 2 whistles. Instead of pressure cooker you can cook in open pan to avoid vegetables becoming mushy.
4. Add the ground coconut paste and cook for a few minutes. Remove from flame.
5. Next add curd and mix well. Temper using coconut oil and fresh curry leaves to enhance the flavour.
Avial is ready to be served with Adai.
