Spicy Hot Sambar Podi in Traditional Style

Ingredients to make Sambhar Podi
Coriander seeds - 1 1/2 cup
Red chillies - 3 cups
Kadalaiparuppu/Channa dal - 1/2 cup
Toor dal - 1/2 cup
Fenugreek - 1 tbsp.
Jeera - 2 tbsp.
Pepper - 2 tbsp.
Turmeric powder - 1 tsp.
Method to make Sambhar Podi
1. Fry all of the above ingredients one by one separately in a pan without oil. Always fry in low flame this is the most important tip for flavorful sambar podi.
2. Allow this to cool. Let the ingredients cool completely.
3. Grind the fried ingredients in a mixie. Do not overload the mixer if you grind in large quantities grind in two batches and mix well. Grind it to a coarse texture do not make it into fine powder.
4. Store it in a air tight container.
5. Use 2 to 3 tablespoon sambar podi when preparing sambar.
