Carrot Beans Poriyal is a Simple South Indian Stir Fry recipes which can be served along with lunch as well as with chapathis. This is an excellent Side dish for dal rice and can be served for small kids. Here finely chopped carrots and beans are fried along with some spices which a pleasing and colourful look. Here I have used equal proportions of beans and carrot. Carrots and beans are loaded with lots of essential vitamins and minerals. They are also good source of fibre and antioxidants. Ingredients for making Beans carrot Poriyal
Beans - 1 cup (finely chopped)
Carrot - 1 cup (finely chopped)
Onion - 1 (finely chopped)
Moong dal - 2 tbsp.
Red chillies - 2
Moong dal - 2 tbsp.
Red chillies - 2
Mustard seeds - 1tsp.
Split urad dal - 2 tsp.
Garlic - 6 nos. (finely chopped)
Garlic - 6 nos. (finely chopped)
A pinch of turmeric powder.
Grated coconut - 2 tbsp.
A sprig of curry leaves
Method for making Beans Carrot Poriyal
1. Take equal proportions of finely chopped beans and carrot.
2. Heat oil in a kadai add the mustard seeds and allow it to splutter next add the red chillies and split urad dal when the dal turns brown add the curry leaves.
3. Next add the finely chopped onions and saute till they become transparent.
4. Now add the chopped vegetables and mix well. Saute for 5 minutes and then add the moong dal.
5. Add salt and turmeric powder saute well for 2 minutes and then add 1/2 cup of water and close it with a lid and cook in a medium flame.
6. It will take just 3 to 5 minutes for it to be cooked. Avoid overcooking to retain the colour.
7. After it is cooked add grated coconut and stir well.
Now the yummy healthy Carrot Beans poriyal is ready for lunch.
