Today we are going to look at the simple recipe for cucumber raita. You might be wondering what is great in cucumber raita as it is a combination of cucumber and curd with a pinch of salt. But wait, I am going to add a little twist to the cucumber raita which many of us might not know. This will enhance the taste and will also be different from ordinary raita. Lets get into the making of cucumber raita.

Ingredients needed for Cucumber Raita
Cucumber - 2 nos
Curd - 2 cups
cumin seeds - 1 tsp
Musterd seeds - 1 tsp
Curry leaves - 1 tsp
Few coriander leaves finely chopped
Green Chillies - 1 or 2 as per your need
Oil - 3 tsp
Salt to taste
Method for making Cucumber Raita
1. Peel the skin of the cucumbers
2. Grate the cucumbers with a long slicer to look like noodles. This will give you a different look and feel than the normal way of grating or slicing the cucumber. Make sure you only grate the outer part of the cucumber and not the seeds inside.
3. We are not going to use the seeds of cucumber in the raita to make the raita taste differently.
4. Take 2 cups of curd and add salt as per your taste and mix well.
5. Add the grated cucumber to the curd and mix well. Set aside the mixture for a few minutes for the curd to blend with the cucumber.
6. Take a pan and add 3 tablespoon of oil. Once the oil gets heated add mustard seeds and wait till it splutters.
7. Add Cumin seeds and wait till it splutters. Then add finely chopped green chillies and curry leaves and wait for few seconds.
8. Add the mixture to the cucumber raita and mix well. Garnish with Coriander leaves.
9. Your cucumber raita is ready.
10. This goes very well with Vegetable Biryani, Tomato rice and Chapathi.
Note: I would personally add another tablespoon of cumin seed to the raita as I relish the crackling sound of the cumin seed in my mouth while having the raita.
