Ingredients for making Aval Vegetable Vadai
Thick Poha - 2 Cups
Green Chilli - 2
Chopped Ginger - 1 teaspoon
Salt as required
Bread slices - 4 nos.
Oil - for Frying
Curry leaves - few
Finely chopped Onions - 1/2 cup
Finely chopped Carrots - 1/4 cup
Finely chopped Beans - 1/4 cup
Finely chopped cabbage - 1/4 cup
Method for making Vegetable Aval Vadai
1. Wash the Poha / aval in water 2 times to remove dirt. Drain the water and soak in water for 10 minutes.
2. Powder the bread slices in a mixie to make bread crumbs. Squeeze any extra water from poha and mash it well.
3. Transfer the bread crumbs in a mixing bowl along with the mashed poha.
4. Add the finely chopped ginger, salt, chopped onions and vegetables, curry leaves and mix well to form a dough.
5. Heat the oil in pan, drop little amount of dough, when the dough comes up then the oil is ready.
6. Take a banana leaf or a plastic cover, place a little amount of the batter and make small hole in the middle and then spread. Now drop this to the oil.
7. You can add 4 to 5 vadas in the oil and then turn it to the other side when it is cooked.
8. Remove when you get a golden brown colour. Always cook in a medium flame, if the flame is high the vada becomes brown outside and the inner portion will be uncooked.
