Ingredients for making Idli Sambar
Method for making Tiffin sambar
1. Take a pressure cooker add the dals, small onions, drumstick with 1/4 tsp of turmeric powder and add 5 cups water and cook for 5 whistles.
2. Soak 50 gm of tamarind in water and extract about 100 ml of tamarind water and set aside.
3. Heat 2 tbsp of ghee in a kadai, add curry leaves and finely chopped tomatoes and saute till the raw smell of tomatoes disappears.
4. Add tamarind water and jaggery and add 150 ml of water. Allow this to boil till the raw smell of tamarind and jaggery disappears. This may take around 8 to 10 minutes.
5. Now add the cooked dal mixture and mix everything together for 3 minutes and then add 1/2 litre of water. Add turmeric powder and salt and allow it to boil well. Keep this aside. after 5 minutes add finely chopped Coriander leaves.
6. Heat a tadka pan and add 5 tbsp of groundnut oil, when it is hot splutter the mustard seeds and add the roughly chopped onions and saute till it becomes transparent. Next add 1 tbsp of hing and switch off the flame and then add 2 1/2 tbsp of sambar powder and mix well.
7. Now transfer this to the already made dal mixture. Keep this in medium flame mix well and allow it to boil.
8. Add a tbsp of ghee and coriander leaves and mix well. You will get a nice aroma of tiffin sambar.
Serve this with idli, dosa or with any South Indian Tiffin.
