Ingredients needed to make Coconut Rava Kesari
Rava - 1 cup
Grated fresh coconut - 1/2 cup
Sugar - 3/4 cup
Ghee - 1/4 cup
Raisins - 10 nos.
Almonds - 10 nos.
Cardamom powder - 1 tsp.
Water - 2 1/2 cups
Food colour - A pinch
Method for making Coconut Rava Kesari
1. Heat a teaspoon of ghee in a pan, fry the cashew nuts and almonds until they turns brown.
2. Now add the rava to the same pan and roast them well till you get a nice aroma. Transfer this to another vessel.
3. To the same pan, add the fresh grated coconut and fry for 2 minutes.
4. In a heavy bottomed vessel take 2 cups of water and sugar and when the sugar syrup starts to boil add the food colour of your choice and then add the rava and roasted coconut to the water.
5. Stir and cook in medium flame until the rava gets well cooked.
6. Now add the remaining ghee and stir well till the kesari leaves the sides of the vessel.
7. Garnish with roasted raisins and almonds.
