Paruppu Urundai Kuzhambu is a tasty tangy flavorful of the traditional recipes of Tamil Nadu which is a popular Chettinad Cuisine. Here the tasty pakodas or urundais are dropped in Kaara Kuzhambu and the kuzhambu gets absorbed by the paruppu urundais which gives a delicious flavor and taste. This Kuzhambu goes well with Idlis, dosa, upma and white rice. Kuzhambu with hot white rice served with any Papad or Poriyal will be loved by everyone.
Ingredients for making Paruppu Urundai Kuzhambu
For the Paruppu Urundai
Kadalai Paruppu / Gram dal - 3/4 cup
Toor dal - 1/4 cup
Chopped Onions - 1/2 cup
A handful of chopped coriander leaves
Chopped garlic - 3 tbsp.
A sprig of curry leaves
Fennel seeds / Sombu - 1 tsp.
Green chillies - 2 nos
For the Kuzhambu
Tamarind - lemon size
Turmeric Powder - a pinch
Sambar Powder - 1 tsp.
Onions - 1 no.
Tomato - 1 no.
Garlic - 10 pods
Curry Leaves - few
Gingely Oil - 2 tbsp
Mustard seeds - 1/2 tsp.
Fennel seeds - 1 tsp.
Fenugreek seeds - 1 tsp
Urad dal - 1 tsp.
Salt - as per taste
To grind
Red Chilly - 5 nos.
Coriander seeds - 2 tbsp
Black Pepper - 1 tbsp
Urad dal - 2 tbsp.
Fenugreek seeds - 1/2 tsp.
Poppy seeds - 1 1/2 tbsp.
Onions - 1 no.
A sprig of curry leaves
How to Prepare Hotel Style Kara Kozhambu
For making Paruppu Urundai
1. Soak the dals in water for 2 hours.
2. Grind the dals along with salt and sombu in a mixie to a coarse paste.
3. Transfer this to a mixing bowl add the chopped onions, green chillies, curry leaves and coriander leaves. Mix well.
4. Make small balls and steam cook them in idli plates.
For making Kuzhambu for soaking Paruppu Urundai
1. Heat a spoon of oil and fry all the ingredients given under "To grind" to a coarse mixture.
2. Cut the big onion and tomatoes into small pieces.
3. Take a thick bottomed kadai, add oil and sauté mustard seeds, urad dal, fennel seeds and fenugreek seeds.
4. Then add the curry leaves, garlic and onion fry well to a golden brown in colour.
5. Then add tomato slices sauté well for a minute in low flame.
6. Now add the ground masala paste for Kara Kuzhambu recipe. Saute for 3 minutes.
7. Add the turmeric powder, sambar powder, tamarind juice and add water and salt as per your requirement. Let the gravy boil for 5 to 10 minutes.
8. Now the Kara Kuzhambu is ready just drop the steamed paruppu urundais in the kuzhambu. Leave it for 30 minutes.
