Ingredients for making Kothavarangai Poriyal
Kothavarangai / Cluster beans - 250gmOnion - 1 no.
Crushed Garlic - 2 tbsp.
Mustard seeds - 1 tsp.
Dry Red Chilli - 1 no.
A sprig Curry leaves
Asafoetida (hing) , a pinch
Fresh coconut , grated - 1/4 cup
A handful of peanuts
Green Chilli - 1 no.
Oil as required
Salt , to taste

How to make Kothavarangai Poriyal Recipe
1. Wash and finely chop the cluster beans by discrading the ends and keep aside. Chop the onions and green chillies. Add the roasted peanuts in a mixer and grind to a fine powder.
2. Boil water in a kadai and add the chopped kothavarangai with salt and allow it to cook till soft.
3. Heat oil in a heavy bottomed pan on medium flame, add the mustard seeds and let it crackle.
4. Add the split urad dal and when the dal turns brown add the asafoetida, green chillies and let it splutter.
5. Once it splutters, add the finely chopped onion and saute until it turns translucent.
6. Add the crushed garlic saute well.
7. Add the turmeric powder, chilli powder and required salt and saute well.
8. Now add cooked cluster beans and saute for a 3 to 4 minutes.
9. Next add the peanut / groundnut powder and mix well.
10. Add the grated coconut and stir well and switch off the flame.
