Mappillai Samba idli is one of the healthy nutritious breakfast recipe which is good for diabetic and hypertensive patients. Mappillai Samba also called "Bride Grooms Rice" because it gives good energy and strength. This gluten free rice is rich in fiber and minerals and is also good for people of all ages. This idli looks red in colour and is so soft and fluffy. This is ideal for diabetic people because of its low glycemic value. Tastes well with Groundnut chutney and curry leaves onion chutney.
Ingredients for making Mappillai Samba idli

- 2 Cups Mappillai Samba rice
- 1/2 cup urad dal
- 4 tbsps Poha / Aval
- 1/2 tablespoon Fenugreek seeds
- Salt to taste

Method for making Mappillai Samba idli
1. Wash the mappillai samba rice with water 3 times to get rid of impurities and Soak the rice, aval, urad dal together for 5 to 6 hours in water.
2. Drain water and grind everything to a smooth batter by adding very little water. Do not add more water as it may become runny.
3. Add required amount of salt and allow this to stand for 6-8 hours or keep for overnight fermentation.
4. After fermentation store the batter in a refrigerator.
6. Grease the idli plates and steam cook for 10 to 12 minutes.


Healthy Mappillai Samba Idli is ready.
